Simple Veggie Wrap
Diced Veggies, smothered in garlic hummus and wrapped up in a warm whole wheat wrap! Tempting isn’t it? Try our healthy version of an old favorite.

Ingredients
Instructions
  1. Peel and dice sweet potatoes, Place in a stove top pan with a little olive oil until tender
  2. While the sweet potatoes are cooking, dice all remaining vegetables
  3. Place all veggies into another pan and sauté’ until tender, but not mushy.
  4. Once the potatoes are done, add them to the veggie pan.
  5. Stir all flavors together and simmer for about 3 minutes.
  6. Add balsamic glaze, salt/pepper to taste.
  7. Spread the hummus onto the wrap, fill with vegetable mixture.
  8. Wrap it all up and place into hot stove top pan. Warm both sides of the wrap, approximately one minute per side before serving.
