Skinny Football Quesadilla
Low fat, and low in calories quesadilla! Quesadilla’s come in many forms. To keep this recipe on the lighter side, choose chicken, veggie or black beans.

  1. Warm up a large stove top pan. Mix all ingredients (except tortillas) in a bowl. Shred chicken. Chop all veggies
  2. Once the pan is hot, spray with olive oil. Lay one side of the tortilla in the pan, then spoon ingredients onto the tortilla. Lay top tortilla on top of the mixture and then press down with spatula.
  3. Once bottom is golden brown, and cheese slightly melted, flip until top half is golden brown.
  4. Repeat until mixture is gone.
  5. If using veggies only: pan cook green bell peppers and onions. If using black beans: add 1, 12oz can of beans. Warm up and then proceed through instructions.
