  1. Peel celery root
  2. Cut celery root into small chunks (for boiling)
  3. Place coconut milk into sauce pan and heat to a slow, low boil
  4. Add celery root chunks and boil until soft (ready for mashing) about 20 minutes
  5. Remove from sauce pan and mash by hand or use a food processor.
  6. Add salt and pepper to taste
